The “Not So Fast!” Food Truck is coming to Invictus!

Starting Saturday, July 28th, you may notice a new addition in our parking lot in the shape of a big food truck serving up yummy and nutritious post-workout meals to our athletes. We are pretty excited to try out the new Paleo/Primal creation that’s taking San Diego by storm – the Not So Fast! Food Truck.
Not So Fast! is a unique mobile kitchen serving the San Diego area that specializes in fresh, wholesome, nutritious meals on the go. Utilizing local farms and sustainable sources, they offer truly healthy, homemade fare that is gluten free, soy free, sugar free, grain free, legume free, with no preservatives and presented to their customers with fast, friendly service. I sat down with the folks behind the idea to see how they came up with this brilliant plan to make San Diego a healthier place.
Jaimie: “Not So Fast! Food Truck” – I love the name! Where did you get this idea from?
June & Bob: Not So Fast! Just came to us one night. It was a play on words that represented what our mission is. We are what fast food could and should be.
Jaimie: Describe your daily menu to me and tell me why you think the Invictus community is gonna love what you are serving.
June & Bob: We serve everyday fast food items like Burgers and Fish Tacos, along with our own crazy creations of Turkey Meatloaf Muffins and Root Veggie Poutine. The twist is, we make every single item on our truck from scratch with locally sourced products. All of our foods are 100% primal.
Jaimie: Tell us about your past experiences with working in the food industry and why you’ve decided to chase this primal dream.
June: I’ve worked in the restaurant industry for over 8 years, bartending and serving in various restaurants along the California coast. Although my passion is still in food service, I am excited to get some healthy options on wheels and give people a chance to try Paleo themselves. Bob and I love to spend time outdoors, and after a long hike we are starving. But, who wants to go home after a 4 hour hike and sit in front of a hot oven just to cook for another hour or two.. Well, we do! That is our goal! We want people to know us as the place they can lean on for a quick healthy meal when you just ‘don’t feel like it.’
Bob: I have been working in food service for 15 years. I’ve worn every hat from dishwasher, to busser, to cook. Over the past 7 years, I have been a Sr. Operations Manager at the House of Blues in Atlantic City, NJ & Dallas, TX, Assistant General Manager at Lucky Strike Lanes in Philadelphia, PA and most recently, Manager at Wavehouse.
Jaimie: Bob, you’ve struggled with weight issues and “fad diets” in the past; how would you describe your relationship with food today?
Bob: My relationship with food is amazing. I eat things I never would have touched years ago. I eat what I want, when I want and I don’t feel bad about it because of what I am eating. I craaaaaaave meat and veggies these days as opposed to gummi bears and mozzarella sticks (one of my past favorites). My knowledge with food and cooking was always good, but since going primal, I have become much much better. Heck, all of the food we serve is food I make for June and myself at home every day!
We definitely can’t wait to try out all of the yummy creations that Bob and June will be serving up! Starting Saturday, July 28th, the Not So Fast! Food Truck will be located in our parking lot during our Saturday group classes. I am so excited! I have been following their progress for the past couple of months and I am so happy their dream is finally becoming a reality!
